Easiest cookies ever: Banana cookies! (or banana pancakes)

In the mood for something sweet but don’t know what to whip up? Try these super simple yet yummy banana cookies. 🙂

Often getting an urge to munch on something good yet healthy? Make sure to keep bananas in the house! You can make many really great things with this fruit. Just make sure the bananas are organic (otherwise you are eating poison – and supporting the awful conditions which prevail in many banana plantations. If you don’t know what I am talking about, just check out the documentary “Bananas”).

You can also use this recipe to make banana pancakes. Just throw it in the frying pan with some organic coconut oil (the best thing to cook anything with). Making the pancake in the oven on a baking sheet like one huge cookie works too.
For the one who is trying to stay away from sugar – skip the honey. The banana is sweet enough (at least for the pancake).

Ingredients
4 ripe bananas
4 tablespoons of oat flour (you can just put rolled oats in the blender)
1 tablespoon of honey (or: Agave, maple syrup, Stevia leaves or Yacon syrup)
That’s it! 🙂

Mix everything together with a fork (or in the blender or food processor). Place on baking sheet and put in oven for 30 minutes at about 180 degrees Celsius.

Then you can of course add your favourite toppings – like chocolate chip, coconut, your favourite nut butter or something completely different. Use your imagination!

For the cookies in the picture I did four different kinds of cookies:
1. Just basic recipe
3. Basic recipe plus cacao powder and walnuts
2. Basic recipe plus vanilla powder
4. Basic recipe plus vanilla powder and organic peanut butter placed in between two cookies. (My absolute favourite!)

For the jumbo banana cookie I did the basic recipe plus vanilla powder and organic peanut butter.

Enjoy with raspberries, mango and perhaps some Nutella (nut free). And make a few where you place your favourite nut butter in between two cookies. SO SO yummy! My absolute favourite!

Gluten free?
If you want it completely gluten free, just use buckwheat flour instead of oat flour.
