Raw vegan blueberry crumble pie

Here is a recipe for a very yummy blueberry crumble pie. It is vegan, raw, gluten- and refined sugar free. The blueberries can easily be swopped into any other berry or fruit.

Ingredients (makes one big pie – like in the picture – and one small)

Crust (made in food processor)
1/2 dl flax seeds (0,2 cup)
1,35 dl shredded coconut (0,6 cup)
1/4 dl organic hemp powder (0,1 cup)
2,7 dl cashews (1,1 cup)
15 dates (soaked for a few minutes) – or about 2 dl or 0,85 cup
1 tbs pure vanilla
Pinch of Himalayan pink salt

Blueberry sauce (made in blender)
500 gram blueberries (about 3-4 dl or xx cup) – frozen or fresh
2 tbsp Agave syrup
3 tbs chia seeds
(1 tbs vanilla – optional as it is as good without)

Top crumble crust
0,7 dl cashews
0,7 dl almonds (oats works too)
1 tbsp Agave or honey
0,5 dl shredded coconut

How to
Form crust in your choice of pan or pie form and store in fridge.
Make the blueberry sauce and then set aside to thicken while you make the top crumbles.
Then pour the sauce on top of the bottom crust and then the crumbles on top. Store in fridge or freezer.

 Serve with
…a simple and easy raw strawberry sauce. Just put frozen strawberries in the processor and blend.
Add a bit of water. Done!
If you want to you can also add 1 tbs of honey – but not really necessary.

Organic seed crackers – easily made raw

Easy to make and you can vary the ingredients to infinity. Just use what you have at home pretty much  (well, gum won´t work :).

Ingredients (organic)
3 1/2 dl rolled oats (about 1,5 cup)
1 dl flax seeds (0,4 cup)
1 1/2 dl sunflower seeds (0,6 cup)
1/2-1 dl pumpkin seeds (0,2-0,4 cup)
1 1/2 dl sesame seeds (tahini) (0,2 cup)
1 tbs Himalayan salt
1 1/2 tbsp olive oil
4 tbsp chia seeds

(you can also put things like for example juice pulp, cumin seeds and walnuts in the mixture)

How to
Put all ingredients in a bowl. Pour 4-5 dl hot water on top of it all and stir a little bit. Then let it set – and get gooey – for a few minutes before you pour everything onto a parchment paper. Put another parchment paper on top of the mixture and then use a baking roller to make the dough/mixture even and thin. The thinner the better – but just know the crackers will also break more easily.

Note: Instead of pouring hot water on top of everything you can use cold water (just let it sit a bit longer) OR you can put the rolled oats in a pot and boil them for a minute (or less) together with 4-5 dl water before mixing it with the rest.

You will need two baking sheets to spread all of the mixture. Put in oven at 150 degrees C  (302 degrees F) for about 20 minutes. Watch it carefully since the crackers easily burn. Try putting your finger on top of it. When it is hard it is done. 🙂

Clean ginger lemon ice cream and frozen chocolate mousse with almond crunch

A ginger lemon ice cream and frozen chocolate mousse with almond crunch.
So freakin’ good!

Sugar free, raw, vegan and – according to me most important – totally clean.

“Nice cream”

Ingredients
3 frozen organic bananas
juice from 2-3 organic lemons (the more the better according to me)
About 4-5 cm (or 6-8 slices) fresh graded ginger (depends on how much you like ginger)
1 tbsp lemon zest

How to
Blend in food processor using the s-blade.
Store in freezer for about an hour before eating it. (However, if you keep it in there for too long it will unfortunately get icy.)

Frozen chocolate mousse

Ingredients
1 avocado
1 tbsp coconut oil
1 dl pitted dates (or about 0,4 cup)
0,5 dl raw cacao powder (about 4-5 tbsp)
1/2 banana (optional)
chopped up organic almonds

How to
Mix in processor. Store in freezer for about an hour before serving.

Clean Snickers cake with lingonberry/red currant ice cream

I made a heart shaped snickers bar for my boyfriend for Valentines since he loves my clean Snickers bar.
Raw, clean, vegan, sugar free, gluten free and dairy free.
And – well… so so yum!

You will find the recipe for the snickers bar here. You can choose to make bars, cakes or bite size hearts…
… and you will find the recipe for the ice cream here. Just add lingonberries and red currant to the frozen bananas. You can also add about 1 tsp of juice from pomegranate or beet for a more intense colour.

I have made this wonderful thing lots of times. I just vary the ingredient list a little bit from time to time – for example what nuts you use and the amount of coconut and dates – and you will end up with totally different flavors.

…Like the cake in the pic to the left I did more cashews for example – and chopped the nuts fine. And for the heart shaped version the nuts in the middle layer is not chopped as fine cause I wanted a crunchy feel. I also did the chocolate ising less sweet. Both turned out great!

Healthy oat blueberry pancakes

A breakfast/lunch/snack you quick whip together. Vegan or not – you decide. Enjoy!

Healthy oat blueberry pancakes

Ingredients
1 dl oat flour (about 0,4 cup)
1 dl water (or more)
2 tbsp chia seeds
1 tbsp psyllium husk
0,5 dl blueberries
pinch of Himalayan salt

Optional: add some chopped up pumpkin seeds and/or sunflower seeds if you want some crunchiness)
2 eggs

How to
Mix water and chia seeds and let it get goohi (takes like three minutes).
Mix everything together. Add as much water as you want.
Fry with organic coconut oil and a little bit of organic canola oil.

Serve with fresh or frozen blueberries – or other yumminess.

Clean treat: Raw vegan snickers bar

In the mood for something sweet yet salty?
Here is the perfect thing: Raw vegan and – most important – CLEAN snickers bars.

OMG… They are seriously to die for.

Crust
Approximately…
2 DL raw nuts (I used 1 DL almonds, 0,5 DL walnuts and 0,5 brazil nuts
(but you can use walnuts, hazelnuts, peanuts, macadamia nuts and so on…)
1,5 DL pitted dates (soaked for about 20 minutes)
0,5 DL desiccated coconut (optional)

Put nuts in food processor and pulse for about 15 seconds. Add the dates and the shredded coconut and whirl until combined. Spoon into a form lined with parchment paper and spread evenly. Set aside in fridge (or freezer).

Caramel layer
Approximately…
1,5 DL pitted dates (soaked for about 20 minutes)
About 1-2 DL tablespoons coconut oil
1 teaspoon vanilla extract
1/2 DL chopped up nuts (optional – good if you want the crunchy Snickers feel. I did almonds and peanuts).
About 1/2 DL water
Pinch of Himalayan salt

Blend in food processor, adding water slowly – as much as you think you need. (Don´t make it too runny!) Pulse until smooth. Pour the caramel over the crust and place in freezer while you make the chocolate layer.

1/2-2/3 deciliter coconut oil
2/3 deciliter cacao powder (raw or not – you decide)
4 tablespoons sweetener (or to taste). Like for example Agave, raw honey or why not Yacon syrup (- which is not going to effect your blood sugar as much as other sweeteners).
Pinch of Himilayian salt (or two!)
1/2 DL water (or less), added slowly
Peanuts – natural or salted (I just sprinkled some Himalayan salt on top of them – yum!) – optinal!

Blend all ingredients in a food processor until smooth. Add water slowly and don’t use too much – then it will become very sticky and not set in the freezer).
Spread everything on top of the caramel layer and put in freezer for an hour or two until set. And oh yeah, sprinkle some peanuts on top of everything if you want to.
Cut into small bite-sized pieces – either before it has set (and separate the pieces a little bit) to make the chocolate run down the sides of the bar OR after it has set. In the pics you see both examples displayed.

Perfect way to start your day! Sunshine in a glass

Orange lemon ginger juiceJuice up with orange, lemon and ginger. An amazingly simple yet amazingly good juice that made my 8 month old son go bananas! 🙂
From happiness, nothing else, I should add.
You need to try it!

Ingredients (serves 1)
1 orange
1/8 lemon
A big piece of ginger (like 2,5 cm)

Here’s how
Peel and chop fruit. Put in juicer. Drink! Enjoy! 🙂
